The Honeycomb Old Fashioned explores the affinity of Canadian whisky and HONEY!
Crafted using a batch of honeycomb "wax-washed" Rye Whisky, local honey and our Aromatic Bitters, this is our re-imagined take on the classic. If you're wondering what wax-washing is, here's the 411. In a temperature controlled tank we added local honeycomb and our rye whisky and then we turned up the heat to 60c for 90 minutes. The resulting liquid is super rich in mouthfeel and texture with a little added honey flavour. To really amp up and double down on that honeyed flavour, we added more fresh honey to the mix, some of our Aromatic Bitters for warm spice character and voila - the Honeycomb Old Fashioned.
A traditional Manhattan cocktail, using our grain-to-glass Rye Whisky, our Niagara-grown Sweet Vermouth, and our Aromatic Bitters, aged all together for an added three months in ex-aromatic bitters barrels.
