Say hello to our newest Laboratory Series release – the Niagara Gin.

Inspired by botanicals that grow throughout Niagara, this gin layers classic citrus and juniper notes with a distinctive blend of foraged ingredients including sumac berry, nettle leaf, dandelion root, wild cherry bark, and lavender. Bright aromas of orange and lemon peel give way to earthy herbs, subtle spice, and a long, complex finish. Familiar yet uniquely regional, it's a gin that feels unmistakably Dillon's, whether enjoyed in a dry martini or simply with tonic.
