Together with the SAMMARCO team, we hand-selected three distinct distillations: a sour mash, a coffee bean vapour distillation, and a traditional rye mash. These were aged separately in a combination of new Ontario oak and first-fill bourbon barrels, allowing the grain to fully express itself and develop deep complexity.
To finish, the whisky was rested in botrytis affected Sémillon barrels Stratus Vineyards for four months, adding a rich, honeyed finish with notes of stone fruit and gentle spice.
The result? A spirit as dynamic and distinct as the collaboration itself.
A traditional Manhattan cocktail, using our grain-to-glass Rye Whisky, our Niagara-grown Sweet Vermouth, and our Aromatic Bitters, aged all together for an added three months in ex-aromatic bitters barrels.
Crafted using 100% Canadian rye and aged for four years in new Ontario oak, new American oak & first fill bourbon casks, this is our truly grain-to-the-glass Rye Whisky.
